1. Про уместность - не знаю. Полагаю, что если коллега - гражданин Израиля, то однозначно уместно, поскольку праздник государственный.
2. Пишут Shana Tova uMetuka (Счастливого и сладкого нового года). Возможно, есть какая либо другая транскрипция.
