Уважаемые,
я вот в ступоре. Хотела сказать на английском " ты выдержан, как дорогой коньяк" и поняла, что не получается ничего. Как это сказать да ещё и так,чтоб меня поняли.
и раз уж я уже тут, как сказать "губы обжигает терпкий вкус" harsh to the taste flavor burns my lips?

You cannot say that in English because the second sense of "выдержан"=сдержан (~reserved, controlled) is absent in the English equivalent.

But would you believe it, they, too, have a quite popular (and rather corny) saying, as "mature" allows for a similar ambiguous usage in English (Google: "Quote by Richelle Mead: “I'm like a fine wine. I get better with age" - i.e. "mature")

So you'll have to find some roundabout way to say it, reinventing the play on words.
One can try to squeeze something from "Apellation d'origine contrôlée" which is stamped on French wine bottles, e.g.
Your emotions are like expensive French wine, "contrôlée" at their origin, (and this does not seem to improve with age, dear)

Which is not a bad line, AFAIC
